This cake was a complete experiment for me. I’m allergic to life but mainly peanuts and tree nuts so when my friend wanted a peanut butter cake for her birthday you can see my hesitation to fulfill that request. Luckily the allergy world has been blessed with SunButter an amazingly delicious peanut butter substitute!
What you’ll need:
2 Sticks of Unsalted Butter
2 Cups of Confectionary Sugar
2 Tablespoons of Vanilla Extract
1 Cup of SunButter (or regular peanut butter)
1/2 Cup of Half & Half (or till the consistency you prefer)
8 Oz. of Bakers Semi-Sweet Baking Chocolate
and a box of Chocolate cake mix or your favorite homemade recipe
First, combine the SunButter with 1 Stick of softened butter in your mixer. Then add the vanilla extract and the confectionary sugar. Pouring the half & half intermittently with the Confectionary sugar will help the mixing process. Once you’ve frosted your cooled cake with the peanut butter frosting put it in the fridge while you create your chocolate ganache topping by simply melting the bakers chocolate bars with 3/4 of a stick of butter or more to get your chocolate thinner. Pour the Ganache on top of your cake and top with any candy toppings you like best!
