With February and Valentine’s Day right around the corner I wanted to share a few desserts that will make everyones day a little sweeter. These chocolate cakes are topped with a whipped cream cheese frosting with a layer of fresh cut strawberries in the middle. The frosting is then topped with a chocolate ganache and a chocolate covered strawberry for decoration!
I started by making a sheet cake from a chocolate fudge cake mix and using a small circle cake cutter two cut out the layers of the cake. I pieced together the layers with frosting and a crumb coat (a thin layer of frosting to seal in the crumbs before the final frosting) and then placed them back in the fridge for a few hours. When the crumb coat had set I finished with the final frosting and put the cakes back in for another hour.
Pour the chocolate ganache till the puddle expands to the edges and use a spoon or spatula to gently push the ganache over the edge to create drips. Dip the strawberries in the warm ganache and place on top!
Whipped Cream Cheese Frosting
1.5 cups of heavy whipping cream
1 8oz. package of cream cheese
1 cup of sugar
1 tsp of vanilla extract
1/8 teaspoon of salt
Whip the heavy cream until peaks form, in a separate dish soften the cream cheese, and combine the cream cheese, sugar, vanilla extract and salt. Fold the whipped cream into the cream cheese mixture and then finish with the mixer to smooth out the mixture. I added a touch of red food coloring to get the light pink coloring.
1 cup of heavy cream
1 8 oz package of milk chocolate chips
Bring the heavy cream to a simmer on the stove and pour over your bowl of chocolate chips, stir until melted!
